Tomatoes Stuffed With Garlic and Cheese

My Russian friend Dina first introduced this delicious appetizer to me. It is really easy to make and tastes delicious. My sister Faina helped me take the photos and make the tomatoes. You can use any type of hard cheese that you can shred. Here, I used a Gruyere cheese, but you can use anything from a sharp Cheddar to a Romano or Parmesan. Just pick your favorite hard cheese!

First, you need:

4 Tomatoes

1 block of cheese (1/4 cup)

2 T of Mayonaise

3 Cloves Garlic

Chives

Next, halve the tomatoes…

Using a spoon, scoop out the insides of the tomatoes, Put aside, discarding the liquid, and chop up really finely.

Add the cheese, chopped garlic, and mayo to the tomatoes. Mix. Taste. If it is too dry, add mayo, if it is not sharp enough, add garlic or cheese. It all depends on your taste buds.

Add the mixture to the tomato halves.

Decorate with chives.

And voila! You have a delicious appetizer! Enjoy!
