Cucumber and Tomato Salad

This is a traditional Russian and slavic salad that my family made many, many times while we were growing up. If you travel to Russia or Ukraine or any Eastern European country you are sure to come across this dish, in the homes of friends or even in a restaurant. Simple and refreshing, you can make it year-round. If you don’t like chives, you can use onion, red or yellow or even white, instead. At its most simple state, it is tomatoes, cucumbers, onions and sour cream. I added radishes, which are traditionally in some Russian salads. If you’d like, you can also substitute Greek yogurt for the sour cream, or mayo for a less healthy substitute. I have a craving for this salad now that the winter months are near us, and it is so cold outside! You can also make less of it by halving the ingredients, which is easy to do! This salad brings warm memories of sitting around the table and eating Russian food. For this lovely salad, you need the following ingredients:

2 cucumbers

3 tomatoes

1 bunch of chives

7 radishes

1 cup sour cream

Dice up the cucumbers really small.

Dice up the tomatoes really small as well!

Cut up the radishes either in semicircles or dice it as well.

Dice up the chives.

Add the ingredients all together and mix!
